RCJ Special Bibingka


Bibingka is a rice cake type of food originally from Philippines. It is mostly made with rice flour and coconut milk or sometimes water and its common secondary ingredients are eggs and milk. It is traditionally prepared using a circle-shaped small container called terra cotta and lined with a single large section of a banana leaf. When it's already cooked, the result of bibingka is soft and spongy just like puto. To make it more tasty, spread some butter into it and sprinkle an average amount of sugar on top of it. That is how bibingka is commonly made.

In our town, Balasan, bibingka is our finest delicacy. This special bibingka of Balasan is more different among other bibingkas i've ever tasted. RCJ Bibingka is rich in coconut meat, coconut milk, egg, butter and sprinkled with sugar on top of it. Some of its ingredients is not to be told because its their top secret. :)

Every time i buy bibingka when i was a kid, i always used to watch the people making it. I am very interested watching them while preparing my order. I love the smell of bibingka while it is baked and when it is already cooked, i used to smell eat.

Other bibingka competitors here in Iloilo tried to imitate our very own RCJ Special Bibingka, but still, they couldn't get the right taste out of it and its secret ingredient. RCJ Special Bibingka has its branch in Jaro, Iloilo City.  Dare to taste it guys, i'm sure you'll love it too!:)
